This edition of Tongue and Throat Memories, entitled Jolof Stories from the Falémé Valley to the Lands of Teranga, offers an opportunity to explore the traditions of hospitality in Senegal and Senegambia known as Teranga and to relate them to contemporary issues.
Chef cuisinier Tamsir Ndir from Dakar is a master of West African cuisine. Over the course of his thirty-year career, Ndir has vehemently advocated the use of local products and spices. He has brought the culinary knowledge he acquired in his home town of Saint-Louis in north-western Senegal to the kitchens of top restaurants in Dakar, Abidjan, Paris, Montréal and other places.
The historian and anthropologist Abdourahmane Seck, chef Tamsir Ndir, fashion designer Khadija Aisha Ba L'Artisane and HKW curator Marie Helene Pereira will talk about Teranga and the principle of reciprocal give and take, followed by a dinner with Tamsir Ndir and Khadija Aisha Ba L'Artisane from 20:30.
