Cooking course in German
Original Allgäu Kässpatzen
with Jan & Lucas

The secret of really good Kässspatzen is well guarded in every Allgäu family. Even at school, every Allgäu child claims: "They make the best ones at home!"

In our cooking course, we reveal the secret of this age-old traditional dish. Together we will make the perfect Spatzen dough from 100% spelt flour and find out how much of which cheese to put in the Spatzen. We will taste each variety of our cheese blend individually and find out how they differ and what exactly makes them so indispensable as an ingredient of successful Spatzen. A large part of the Spatzen secret also lies in the production of an exquisite onion melt, which rounds off our Kässspatzen experience in the most exquisite form.

Kässspatzen is one of those dishes that you just can't get enough of. That's why we traditionally serve it with nothing more than a juicy green salad. Nevertheless, we round off our cooking experience with a little "surprise from the plum".

Menu:

  • I. A LITTLE CHEESE JOURNEY THROUGH THE ALPS
  • ... opens our evening and sensitizes all participants to the ingredients they will be using during the rest of the evening.
  • II. ALLGÄU CHEESE PATTIES WITH GREEN SALAD
  • We prepare a Spatzen dough from spelt flour and use different types of mountain cheese. We will also learn the secret of good melted onions.
  • III. A SURPRISE FROM THE PLUM
  • ... rounds off our evening in a tangy and high-proof way.

Jan & Lucas

Jan and Lucas are a father-son duo with a passion for cooking. As passionate chefs and local Allgäu residents, their ALLGÄUER KÄSSPATZEN are known and loved far beyond their circle of friends.

In addition to his enthusiasm for cooking, Jan has made his passion for storytelling his profession for many years. He has penned several screenplays, novels and children's books. As a commercial film director, he has traveled the world for 25 years and has made good use of this opportunity to expand his culinary knowledge. As a true Allgäu country boy, Jan has had the good Büble beer in his mother's milk and has known the different variations of Kässspatzen since his childhood days.

Although Jan quickly moved the center of his life from Kempten to Hamburg and finally to Berlin, Lucas was also able to spend a few years of his childhood in the Allgäu. So his mountainous homeland is also very close to his heart. After a foray into the fashion world, Lucas now works as an IT consultant for software manufacturer Adesso, for whom he travels a lot. He inherited his passion for cooking from his father and has since expanded and developed it in his very own directions.
